Tomato fish soup
This fresh tomato and fish soup is full of the antioxidant lycopene which is great for your skin and omega three fat essential for brain function. The soup provides a delicious, nutritious feast when served with some wheat free bread on the side.
Ingredients (serves two)
- 12 ripe medium, juicy tomatoes chopped
- 1 large red onion chopped
- 1 clove of garlic chopped
- 2 tbs of tomato puree
- ½ cup of tomato juice
- 1 Tin of sardines or mackerel in tomato sauce
- Worcestershire source to taste
- Black pepper to taste
- Salt to taste
- Honey to taste (only if you want to sweeten your recipe slightly)
Instructions
- Chop the tomatoes, onion and garlic
- Place them in a baking tray with some extra virgin olive oil under a very hot grill until they start to bubble and release their juices
- Once tomatoes have broken down, blend all grilled vegetables in a blender and add the tomato juice and tomato puree
- Pour the mixture into a pan then add the sardines or mackerel and heat
- Taste the soup and then add black pepper, salt,worcestershire sauce and honey to taste until you find your preferred flavour
- Serve with soup with some wholegrain wheat free bread and enjoy
The best tomatoes for making soup are Elegance, a deep-red classic tomato (often sold on the vine) which is sweet and juicy. Aranca are good on-the-vine cocktail tomatoes with a great flavour and aroma. If you like the larger beefsteak tomatoes, try Jack Hawkins.
